All access to your infrastructure must also be held by you. Domains, hosting, licences, administrative passwords - everything is registered to the company, and a copy of the credentials sits with the director. A contractor who holds access alone turns changing supplier into a special operation.
We do, within the limits written into the contract: response and restoration times. Force majeure such as a provider cutting a trunk cable is beyond our control, but even then we arrange a way around it.
Then we usually take on what one person physically cannot keep up with: servers, security, second line and cover during holidays. That mixed arrangement often turns out to be the most sensible.
Easily, if two conditions were met from the start: access is registered to you and current documentation of the infrastructure exists. We do both in the very first month, because holding a client through confusion is bad practice.
